True horror story: I was recently gifted some peppermint bark from a large, chain retailer. I opened the box to give some to my kids.
In the center, it looked like someone had chewed off all the peppermint from at least half the bark. There were literal teeth marks. Straight to the dumpster…the end.
Well, not quite the end. I decided to try and make some of my own with cooler and much healthier ingredients.
Candy and confections may have taken a hike when you signed on for a Paleo diet, which can be a real bummer when you need an indulgence. I know that the New Year makes many people reevaluate their health habits, and eating better and drinking less often make the list.
Here is a recipe makeover that will help keep you on track even when you are ready to drink all the wine and eat all the chocolate. Buy the best ingredients you can afford and I guarantee you won’t have any regrets.
Melt the cocoa butter over low heat and stir in the cocoa powder and honey. Remove from heat and stir in the rum extract. I used almond extract once and it was great too.
Carefully spread the chocolate mixture onto a silicone baking mat. Sprinkle and gently press in the nuts, coconut and dried fruit of your choice.
Let the bark set up in the refrigerator for about 45 minutes.
Break into pieces and freeze in an air tight container until ready to serve.
